There are a variety of laws which could be important when considering elections in the State of North Carolina. Below is a short list where a researcher can begin. 

North Carolina State Code North Carolina General Assembly has made the General Statutes available to the public, Here are a few of the state statutes which regulate voting and elections. 

NCSBE - The North Carolina State Board of Elections (NCSBE) is the state agency charged with the administration of the elections process and campaign finance disclosure and compliance. Below is a list of topics which might be useful. 

North Carolina Secretary of State This agency's mission is to support economic growth, promote the public trust and fulfill statutory mandates by providing initial infrastructure for corporate organizations and transactions, protecting citizens and businesses from misrepresentation and fraud by providing public access to accurate and timely information, through law enforcement and through the issuance of professional credentials. The department fosters a well informed citizenry, business community and government, by promoting a responsive, transparent, competitive, and ethical business climate.

North Carolina General Assembly Redistricting is the process of defining the districts from which public officials are elected. Members of the United States House of Representatives, the North Carolina Senate and the North Carolina House of Representatives are elected by district. The North Carolina General Assembly establishes these districts following the return of each decennial census. Legal challenges may impact whether or not the enacted plans are used in elections, and may require additional action by the General Assembly.
